Warm Winter
Salad
Baby Greens for 4-6 people
1
Ripe Pear cut into neat slices
5 slices of 1/4 inch cut
pancetta
Pine Nuts (if desired)
Chevre Goat Cheese - up to your discretion (5 tablespoons)
Balsamic Vinegar
Fresh Thyme to your taste
Napa Valley Grapeseed Oil
Salt and Pepper to
taste
Prepare baby greens in a bowl. Dice panetta
slices. It is best to keep your pancetta in the freezer or place it in
the
freezer for two hours before using, this makes it easy to dice. Slice pear
into small cubes and place in the salad. To your taste, add thyme and salt
and pepper to salad. Fry the pancetta in 1/4 cup Napa
Valley Grapeseed Oil until firm and
brown but not burned. If you desire pine nuts, fry them with the pancetta
just before pancetta is finished. Let cool for 1 minute. Pour the
hot oil, pancetta and pine nuts over the salad. Splash with Balsamic Vinegar
and toss. Pretty Delicious!
