Multi Grain Rice with Wild Mushrooms
Serves 6-8
4-5 lbs. of Chanterelle Mushrooms (or substitute your
choice)
2 cloves of garlic, minced
1/4 cup Napa
Valley Grapeseed Oil
Fresh thyme, salt and pepper to
taste
Mushrooms should be cut into 1/2 inch
slices. Saute mushrooms
in grapeseed oil. Saute for about 7 minutes over medium
heat. Add minced garlic, thyme, salt and pepper to taste and continue to
saute, about 3 minutes more. Remove from heat and set aside.
Follow directions for multi grain rice. When
the rice is cooked, add the mushroom mixture and correct
seasonings.
