Tarts
This appetizer is quick, impressive and a delicious way to start
off your special occasion.
1 package of Pepperidge Farm puff pastry
3 medium sized yellow onions
8 oz. Chevre goat
cheese
1/4 cup Napa Valley Grapeseed Oil
Fresh
herbs and salt & pepper to taste.
Saute onions in grapeseed oil adding salt and pepper to taste
until onions are caramelized.
Roll puff pastry on floured board. Using a 2 inch tart cutter,
cut the dough into circles or flower design. Place on an
ungreased baking sheet.
Place a good teaspoon of caramelized onion
in the center of each tart. Place 1/2 teaspoon or less of goat cheese on top of
the
onions. Place fresh chopped herbs of your choice, like thyme, tarragon,
salt and pepper on each to taste.
Bake at 350o F. for about 15 minutes or until tarts
are lightly colored, puffed and cheese is melted.
